I just tried MacFamilyTree 6 with my old MacFamilyTree 5 family tree database. However, back in MacFamilyTree 5, I can't open it anymore. It says the file was created with a newer version.

With every new version of MacFamilyTree, the database is converted to be up to date with possible changes. When you open your MacFamilyTree 5 database in MacFamilyTree 6, even in the demo, the file is converted to be readable by MacFamilyTree 6. We know not everybody wants to upgrade right away so a backup copy of your previous database is stored in the following location:

Your User Folder - Library - Application Support - MacFamilyTree - Database Migration Backups

It has the .mftsql suffix. Simply replace your file with the most recent backup file from that folder.
